From its beginnings in 1870 as part of Madrid’s most prominent cafés, which writers like P.O. Baroja, Antonio Machado, and Miguel de Unamuno frequented, the Varela café and restaurant has changed.
On Thursdays, traditional madrilenian cocido stew is served along with Galician octopus, Burgos morcilla sausage, and rib-eye steak on the menu of tapas and dinners. Every effort is made to meet dietary needs.
